Body Nurturing Granola Bars

1/2 cup whole milk             
2” piece of vanilla bean
2 cardamom pods, shelled & ground
3 1/2 TBSP Ghee
1 TBSP Walnut Oil
1/4 cup unrefined sugar (optional)
1/2 cup dried Apricots
1 1/2 TBSP Honey

1/4 cup whole wheat pastry flour
1/3 cup hazelnuts, chopped
1/3 cup almonds, chopped
1/3 cup pecans, chopped
1 TBSP Pepitas, chopped
1/4 cup dried blueberries
1/4 cup dried cherries
1/4 cup gluten free cereal mix
1/2 cup rye oats, chopped
1/2 cup oats, chopped
1/2 cup unsweetened coconut shreds

Pre-heat the oven to 350

Bring the milk to a simmer and soak the vanilla bean and cardamom while preparing the dry ingredients.

Combine the Ghee, Walnut Oil, unrefined sugar, apricots and milk/vanilla bean mixture in a food processor.  Stir in the honey.

Add the mixture to the flour and stir.  Then add the remaining ingredients and stir until well mixed. 

Place batter in a 13” x 9” lined baking pan.  Bake for 20 minutes or until slightly browned.  Cool completely, then cut into bars.

Yield: 9 bars
