Iced Ginger Cooler

3 inch piece of ginger, peeled, sliced and mashed
1-2 TBSP unrefined (or brown) sugar
juice from 1/2 of a lemon

Place the ginger with about 4 cups of water in a small pot and bring to a boil.  Continue to  boil until liquid is reduced to 1/2 cup. Lower heat to a simmer, add the sugar and stir until dissolved.  Allow the concentrated liquid to cool slightly, then squeeze in the lemon juice.  Pour into a pitcher filled with ice, add 2 cups of cold water to the pitcher.  After the ice melts a bit,  pour the liquid into ice filled glasses and garnish with a lemon wedge.

Yield: Serves 4
