Sweet Farmer's Market Carrots & Zucchini
1-2 zucchini, sliced
1-2 TBSP ghee
1 TBSP jaggery
1/8th tsp freshly ground nutmeg
Blanch carrots until slightly tender.
Heat the ghee and melt in the jaggery and nutmeg. Add the carrots and zucchini. Saute until tender and slightly caramelized, add salt to taste.
