What is this Stuff? DRAGON FRUIT

This scary monster is known as dragon fruit.  Fortunately, the flavor is nothing to be afraid of.  It's sweet and crunchy, almost like a cross between a kiwi and a pear.  The plant is actually a type of cactus.  The fruit is low in calories and offers numerous nutrients, including Vitamin C, phosphorus, calcium, plus fiber and antioxidants.   I like using the red variety

in fruit salad or pureeing it for an eye catching dressing or sauce.
