Sinful Whole Wheat Peach & Pecan Pancakes

2 large eggs
1 cup whole wheat pastry flour
1 cup all purpose flour
2 cups milk
2 cups diced *Flamin' Fury Peaches
¼ cup dark jaggery
¼ cup walnut oil
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1/2 - 1 tsp freshly ground mace
1 cup chopped pecans

Beat eggs in a medium bowl until fluffy.  Beat in remaining ingredients except peaches and nuts until smooth.  Stir in peaches and nuts.


Heat Griddle or skillet over medium heat.  Grease griddle with ghee or clarified butter.

Pour ¼ cup batter onto hot griddle.  Cook pancake until puffed and dry around edges.  Turn and cook other side until golden brown.


WARNING! These pancakes are dangerously succulent, side effects of over eating these pancakes may or may not include the following symptoms: Full feeling, stuffed feeling, drooling, mmmhhhing, happy belly, smiley face.


*May be substituted with regular peaches but they won't be nearly as good.

    This is a great idea to host a blog. Hope you're having fun with it! I'm going to try to get to the market this weekend so maybe I can pick up some flamin' furious peaches :)
