1 rack of young lamb chops, divided1/4 cup olive oil
2 cloves garlic, minced
1/4 cup mint, minced
Preheat half of the grill to high heat, and the other half on low heat. An upper rack on the grill for low heat is best.
Mix the olive oil, garlic, mint, salt and pepper together. Baste each lamb chop (front and back). Let sit for 30-45 minutes.
Sear each side of the lamb chops over high heat until brown, (1-2 minutes). Move chops to the low heat portion of the grill and cook for 3-5 minutes.
Place chops on a dish, cover completely with foil for 10 minutes to rest.
